I am considering picking up a used Boss GT3 mainly for the purpose of using it as a MIDI controller for Amplitube, Ableton and a software looper.

Alternatively, I may consider picking up a Pod xt live for this purpose but this would cost more.

Just wondering if this can be done?

If it has midi assignment to the pedals then yes. This is one of the reasons I was getting a POD HD500

Who cares what the GT-3 outputs, you could simply use the "midi learn" function on amplitube.

Yes TS, you could do that.

Though if it's only for the midi controlling, you may as well go for an FCB1010.
