So what is the theory behind what he is doing when he is making a chord type thing or play multiple notes a once like where is that coming from just a inversion of a regular chord say c major or is is just 3 random notes from say the pentatonic scale I wanna do this in my improvising but where is it coming from?
Can't you look at his fingers, at the least, and identify what notes he is playing? Then, you could probably use that to construct the chord?

I could easily do it for you (probably without needing to look at his fingers), but that wouldn't help you learn anything would it?
