I now how a hsh strat with Motor city Angeldust humbuckers ready to be put in, and I was wondering what would be a good single coil for the middle position? Tend to play metal, heavy rock, and funk metal.

do you want the output to be closer to the humbuckers, or do you want the output to match the humbuckers when split?

^ Yeah pretty much. Though definitely worth repeating- it's only a very rough guide and everything else needs to be equal. As a very rough guide, medium hot humbuckers split are normally roughly the same output as vintage output single coils. Looking at the MC website, they seem to be fairly hot so I'm guessing either vintage of maybe even vintage hot single coils would work. though really your best bet is probably to email MC ro ask- as long as you realise there's a good chance they'll recommend their own products

skip the split crap and get a Lace Sensor. will be pretty much noiseless and you can find one that has an output that isn't far off from what you want but still retain the positives of a single coil.
