I'm looking at the Scarlett 2i4, the Mackie Onyx Blackjack and the Roland Duo-Capture EX for recording DI guitars.

Does the USB version matter at all? In terms of latency etc.?

The USB version matters, yes, but the latency is the same because USB sucks for this application.

Higher USB version means higher speed data transfer, so that you can, for example, record AND monitor 2 tracks at 24/96.

Sound quality is much more important than sampling rate tho so if something sounds better but has USB 1.1 get what sounds better and set the sampling rate lower.

Definitely don't base your choice on the fact that an interface has USB 2.0 instead of 1.2.
