Hi, what equipment do I need for recording guitar covers ? Can I do so just by using a Nikon DSLR to shoot the video and record the guitar playing with the backing track running in the background?

Yeah, if you want a very basic method, just have the song playing in the background, and record both the guitar and the song with your camera. That's how I started doing covers.

The way I do my covers now is by recording the video and audio separately but at the same time. I use my camera for video, and my audio interface with audacity to record the audio from my guitar or bass.

That would work, but if you want to start recording properly you need to read the stickies.
