I want to change the speaker in my Hayden 1x12 cab but thought I'd post first to see if there is anything I need to take into account?? It currently has an eminence speaker in which I don't like that much, I played through a v30 cab and loved it, so what do I need to think about before hand or is a simple straight swap??

just make sure the speaker you order is the same ohms.

WGS and Eminence make V30 speakers that are cheaper than the Celestion version and they are quite good.

^ if it's only a cab it doesn't even need to be the same ohms, as long as you remember what the impedance is and don't rely on the sticker on the back of the cab

sometimes eminence and celestions are slightly different sizes when it comes to the screw positions, and if you're unlucky they might not match up 100% when you go to swap if you switch from one manufacturer to the other in a cabinet. it's always more or less matched up for me, but you might get unlucky.
