I'm looking into buying an audio interface for my guitar so I can record it without it sounding like crap (I've been making do with the Rocksmith cable), and for guitars I've heard you can get a lot of clipping if you have high output pickups. And would be doing a lot of effects on the software side also lead to more clipping? I have an SX RST (strat clone) and it says it has three single coil pickups. Would I be fine with just an audio interface, or would I need a DI box?

Yes, No.

Using software effects in series just ensure that the level going in is the same as the level going out (most have output level adjustment).

And proper interfaces have input gain controls so it don't matter how high the output of your pick-ups is.
