I'm not going to rank them all for you but here are some easier ones:

For Whom The Bell Tolls
Fade To Black
Orion
Enter Sandman
Nothing Else Matters

I would add Fuel to this list, but yeah. Start here.
Harmony: Stratocaster
Alvarez: F-200
Schecter: Omen 6
Fender: BXR-60
Dean: Metalman Z Bass (Betty)
Egnator: Tweaker 15
Pearl: Maximum
ESP/LTD: EXP-300
Custom: Harley Quinn Bass
Custom: TK-421 Explorer
A steadily growing supply of pedals

Out of those, Nothing Else Matters is definitely the easiest one. Doesn't require fast picking or anything. For Whom The Bell Tolls doesn't really have a solo in it, other than the ending that is basically just whammy bar squeals.

Also, maybe something from Load/Reload. I'm not really that familiar with those albums. But I would expect them to be less shred. Fuel doesn't have a difficult solo.

Yeah, I would look at Metallica's 90s stuff first. I would guess most of the 80s stuff is harder than anything they did in the 90s.

Harvester of Sorrow, Enter Sandman, The Thing That Should Not Be, James's solo in Puppets (the first one), James's solo in To Live is To Die (can't remember which one), James's solo in Orion (the first one?), Nothing Else Matters. Fuel... others as well.

^ I don't think James plays a solo in Orion (just watch the live version - Kirk plays all solos, and they also sound like Kirk's style on the album), unless you count the middle section's guitar melody as a solo. Both solos in To Live Is to Die sound pretty easy.
