When playing Rocksmith 2014, how do I turn off the original guitar track, so it's only me playing the part?

You can't, unless you're using CDLC with multitracks.

Otherwise, you can only turn down the whole backing track.

it wouldn't surprise me if UG goes down within the next couple months, along with other privately owned sites
