I've given up meat for a few months and cured meats are one of things I miss the most (and sausages and venison and fish (idgaf about bacon specifically though))


If i had the resources (land for animals, space for curing, etc) and free time to waste, I'd definitely do it.

Personally I think cured meats should be thought of as an important part of food production. They are capable of contributing to the amount of meat you can store without significantly increasing the amount of meat you have to eat per day to avoid food going off. Thus by not curing meat you'd be actively increasing the amount of food waste produced, and therefore increasing the amount of animals you'd need to raise and slaughter.

 Now you could argue that it wouldn't make much of a difference, but every little helps, right?

I cure meats and make my own assorted cuts, salami, etc.
$200 dehydrator and some salt and spices are all you need. It usually takes 16hrs in a dehydrator and about 5 days in the fridge and it is usually set for consumption.
