How much does the wood you use for the neck and body matter?

Like If I were to use Mohagany body and a Maple neck vs Mahogany and Mahogany, would the difference be noticable?

The neck material itself doesn't have as much affect as body or fingerboard wood, but it still influences the tone quite a bit. I'd say use a maple neck unless you want a really deep, dark tone.

Thanks, Ive got a different question this time.

Where would I get a pick-up selector thing? I can't find a thing to pick the pick-up your going to use (it would be for a gibson)

The Gibson style three way switches are usually referred to as "3-way Toggles" or just "toggle switches".
