Look into some early baroque stuff, study counter/pedal point riffs.
Phyrigian, Harmonic Minor, and an Egyptian scales are my personal favorites.

The classical guitar (looked a bit slimmer than our modern shapes), was invented in Spain around the 16th century. It was actually sort of a serenade instrument to woo ladies, times have not changed :p

Oh, actually, even though the Guitar was not invented in the medieval ages, the lute, however, was. If you buy (coughDOWNLOADcough) some old traditional lute tunes, and get a feeling of them, maybe study their theory, that could help!
