Peruvian Skies, from Falling into Infinity by Dream Theater. It's a lot of fun, and a bit of a challenge.
I love playing "Thorazine Shuffle" by Gov't Mule. It's got the best bassline in the world in it, it's rather easy to play... the only downfall is that it gets stuck in your head too easily. This probably isn't your style of music though... but I love it.
