These are the easiest Metallica solos, so if you want to give them a shot, here they are:

Fade To Black(1st and 2nd solos, could try the main one)
Welcome Home Sanitarium(all 4 solos are pretty easy)
Enter Sandman
To Live Is To Die
Sad But True
The Unforgiven
One(the main solo can give you a challenge)
Harvester Of Sorrow(probably the easiest Metallica solo)
Leper Messiah(solo is an easy sweeping riff that sounds awesome)
Master Of Puppets(this one could give you a challenge)
And you could try Blackened.

Welcome Home (Sanitarium) by Metallica has a few minutes of easy soloing in it, as suggested by Andrew Zara. I'd give that one a try and branch out once you get it down.
Rig

Jackson DK2M -> ISP Decimator -> Peavey 6505 Combo

Maybe I just suck, but the Master of Puppets solo seems a lot harder than a lot of the other ones mentioned here.
