Stairway to Heaven. It is a good song to work on barre chords, and finger picking. It's slow and easy to learn.

Good Riddance. It gives a good intro to chords, and works the picking hand for accuracy.

"Lover You Should've Come Over" by Jeff Buckley. Good use of regular open-voiced chords, but then throws in some very interesting jazz-style voicings, none of which require an actual barre. Uses over 20 different chords in the song. Great tune.
