What does it do?

Is it like, you crank the master to get the overdriven tube tone, and then turn down the individual channel volume if it's too loud?

Yup, the master volume overdrives the power amp valves when turned up.

Master- Overdrives Power Tubes (Breakup)
Channel Volume- Overdrives Preamp Tubes (Overdrive)

Cranking both will give you the full out best overdrive, but that could hurt you in some cases

How bad can it hurt, afterall, it's only rock 'n' roll.
