How bout... a song without vocals? They generally sound good without a singer.

the song "wedding nails"

by porcupine tree, off the album "In Absentia"

is a really cool sounding instrumental. its around intermediate difficulty i think?

anyways, i know porcupine tree isnt the most easily recognizeable band to everyone, so if you havent heard of them, heh sry...i just happened to listen to that song today so it came to mind

Do you have a singer? If not:

Songs w/o vocals:

Call of Ktulu- Metallica
Jessica-The Allman Brothers
Moby Dick-Led Zeppelin

I can't really think of any more off the top of my head.

Try Midnight by Joe Satriani. It's a good instrumental for just one person to play. Impressive too.
