Hmm your question is kind of hazy, but perhaps you are asking how someone can play notes (not in the key being used) in a solo that somehow sound good.

The easy answer to that question is modes, which is learning how the scales of the various keys can intersect and mesh. The real answer is practice practice practice until you get it "naturally".
