Hi ...

If i'm playing in the key of C major ..then my root note is C (thats the unison)...what should i play to go onto the next octave ? is it C eleventh ot Cadd9 ?

As you move up to the next octave it's the same as the octave before.

Intervals you can just keep counting them (c3 to d4 is a major 9th etc)

You should likely just stick with Cmaj. Like this is assuming this is just a rock song, not crazy jazz. If you want to make it sound higher, to a barre chord. Heres what a C barre chord looks like and it makes a nice change in the sound.

This will just give a higher voicing to add some spice into the song.
