Anything older from Marshall really

Yngwie uses the old Mk II JMP heads from the early 70's. But you'd have to crank that thing and throw an OD pedal or two in front of it to get that heavier sound

If you're not after their exact tone, but want something close, a JCM 800 should suit you nicely. Stock for stock, it'll have a hell of a lot more gain than a JMP head. These are single channel heads though, just to warn you (if you look around, there are dual channel 800 heads, but they're harder to come by)
- Gibson Flying V 120 #1 (White)
- Gibson Flying V 120 #2 (Cherry)
- Gibson SG Standard ('61 style)
- Jackson DK2M

- ENGL Fireball 60
- Avatar 4x12

- Many pedals, plus other stuff

There's no real difference from other amps, but the single channel JCM 800s have only one channel. The dual channel JCM 800s have two channels, a clean channel and a dirty channel.

Its more like a dirty channel and a dirtier channel. The Dual channel 800's are useless when it comes to cleans (the low input on the single channels sound great clean though).

Doesn't Vai use a V3 now anyway? The 800 isn't going to get you enough gain out of the box to shred or tap like those guys. Yeah these guys sometimes use older marshalls but they are super heavily modded to have more gain.
