I feel stupid asking this but, what does the bypass switch do on a multi effects processor?

It turns the effects off, as in bypassing them.

Well, the Bypass will only turn them off. Switching off the Bypass will turn them on again.

Bypass means that the signal from your guitar bypasses... DUH... No change in the sound.
