Well Atreyu's "Lipgloss and Black" has a solo. Most part, the band is metal, BUT, the solo doesn't sound like metal to me...sounds full of emotion.

november rain, i think that solo sticks out to me because it is full of emotion. you can sort of hear the emotion being played. and i dont think anyone can pull that solo off perfectly except slash.

Not hard to play though, but actually adding the feel and emotion is not always as easy to do...

The solo to Stairway to heaven is a good solo to start out with. I know it is Done to death but hey. Comfortable Numb is a great Solo to start with as well.
More advanced but not that hard is K'm-Pee-Du-Wee By Steve Vai. The whole song is Easy but not to easy and very nice sounding once you get it under your fingers.

Also, songs can't contain ANY emotion, they use dynamics to portray human emotions. (even that is subjective on what the emotions are, though)
