I was wondering if anyone knew how hard it would(or if even possible) be to change the finish on a guitar.

The guitar in question currently has a see through black finish over a quilt maple top.

I wanted to get a tobacco sunburst finish on this guitar instead. Would sanding the clearcoat off and then sanding deeper remove the black stain/colour? Is the black colour just a see through paint colour and not a stain in the wood?
You'll save lots of time and work by using a stripper. You are definitely going to want to take that bad boy all the way down to bare wood if you want a good sunburst finish.
Just on strippers, not all strippers will work on the modern finishs on guitar. Also I would not recommend using a stripper on something with a clear or translucent finish as the stripper can colour the wood.
