What scale/technique should I use in order to create some medieval-sounding folk/Celtic/Finnish Humpaa folk melodies?

Droning strings tend to also be big in folk music, no matter where you are in the world.

So maybe try some alt tunings that have some crazy chords that you could include droning strings in.

The major scale.
Someones knowledge of guitar companies spelling determines what amps you can own. Really smart people can own things like Framus because they sound like they might be spelled with a "y" but they aren't.
