What is the difference between 5 bridge springs on a guitar and 3?

they also make it really hard to use the trem arm. hendrix had 5 springs, that had to be hard to bomb

you only really need two but the thicker the gauge the more springs

tuning stability. More springs makes it easier for the bridge to counteract the pull of the strings and stay where it should be, but taking out just a spring or two will make the trem a little easier to use and not lose too much stability.
