when I first bought the guitar it was awesome then I took it to a luither to get it set up properly now the action is high. He said he took the shims out so the guitar neck will be right on the body for a full tone, is that true?

Not really, shims don't really do much to the tone, find a GOOD luthier and have him set it up.

well, to some degree. there will be more contact between the body and the neck thus transferring tone better.. but i don't think it'd be noticeable. the shims were probablythere for a reason tho. probably had the neck at a proper level.

I put an extra shim in my guitar a few months ago to lower the action on my guitar. I like it better with the shims.
