By incomplete I mean where they have a member doing multiple instruments.
Some of these bands have created genius albums., like:

Arsis - A Celebration of Guilt, Mike on Drums, James on everything else
Death - Leprosy, Chuck doing vocals, guitar and bass, along with Rick and Bill.

What are some other bands like this that you like?

Dethklok and Quo Vadis I'd say... Quo Vadis only have a permanent drummer,singer and guitarist/composer.... the rest are stage musicians for shows!

allot of black metal bands are good with few members, like Nazgul, Bathory, Summoning, beherit, Darkthrone, Burzum, Deathspell Omega...ect
