I recently purchased these two books, and I was wondering how I should progress through the exercises, how many I should practice at a time, when to move on to the next exercises etc?

Just try a few at the same time.

Focus on one exercise until you can play it perfectly on a slow tempo and then try to speed it up, but don't play one exercise for ages, just play it a few times and then go to a different one. It's better to divide your practice time between different exercises than to spend all of it learning one thing.

If you've mastered a few exercises, try to string them all together into a small solo or riff and play around with them for a while. Once you've learned how to fit the exercises into a solo or have added them to your musical 'vocabulary', move on to a different set.
