The Red Hot Chili Peppers (it looks better unabbreviated) have a good dozen of great ones. My favorite has to be their cover of Sly & the Family Stone's "If You Want Me To Stay". Jeff Buckley's cover of Leonard Cohen's "Hallelujah" is amazing as well.
