I recently got my first guitar and it has a pickup that looks like this.

but there is plastic over it and stuck down the sides (between the silver and black), to be able to remove it do I unscrew the silver pickup or do I unscrew the black plastic around it?

the black plastic, the screw in the pickups are the poles. DONT undo them out.

Are you talking about the clear plastic they put over it to protect it from getting scratched? You sould be able to peel it off fairly easy they do not use a very sticky glue if any some are just static cling. I have gotten used guitars that still have it on the edges of pickups, plastic body parts, tuners and truss rod covers. I think the longer it is on there the harder it is to remove.
