Alright, so I got an EC-500, with the "EMG" 81/85 configuration.

And I was just wondering, would it be tough to change it into a pair of Seymour Duncan '59 model SH-1?

Not if you know how to solder. I'm not sure, but you might need other pots.

It's not all that difficult, although you might just leave them in and buy a new guitar instead?

take it to a shop and let them do it. u dont seem that confident so u shouldnt gamble with a perfectly good guitar.
