POST SOME RECIPES

I love making hokey pokey

INGREDIENTS (I usually double this)

4 tablespoons sugar
1 teaspoon baking soda
2 tablespoons golden syrup

DIRECTIONS

1.) Bring the sugar and the golden syrup to the boil, slowly stirring all the time.
2.) Boil for 7 minutes, stirring occasionally.
3.) Remove from heat and add soda.
4.) Stir in VERY quickly until it froths and pour at once into a greased tin.
5.) Break up when cold.


Pretty simple one, but you have to be quick getting it into the tin once you add the soda. It goes crazy and will not work unless you get it outta there fast.

Also, if you dont bring it to boil SLOWLY the baking soda wont react right and it will not work.

I always make this, I kinda just figured it out my self but it's a good healthy tasty quick meal.

Baked beans
Kidney beans
Butter beans
Cannelloni beans...bascially any canned beans in the house.
Canned tomato's
Chopped red pepper
Squeeze of lemon juice
Chili flakes
Tabasco sauce
Chopped onion
Paprika

Microwave and enjoy with pitta bread

actually, come to thinkof it, pur some sweet chilli sauce over a dollop of sour cream and just have with crackers, its a really good dip.

Brazed short ribs

Beef short Ribs layed out in a large baking pan

combine together:
1 cup of sugar
1 cup malt vinegar
1/2 cup minced onions
1/2 cup minced garlic
1/2 cup grainy dijon mustard

and then enough chicken stock to cover the ribs in this soupy liquid.

cover with foil and braze these for about 6 hours in an oven at about 275 F

when they come out, the meat should be cooked all the way thru with th meat damn near falling off the bone.

use whatever sauce you want (bbq, glaze, whatever) and blast it again with some high heat this time so it puts a nice sear on the outside and slightly caramelizes the sauce you put on..

serve with whatever sides.. rice, potatoes, veggies, salads, beans, etc...

1 Beef Brisket, 3 pounds or so

FOR THE RUB
1 TBL Paprika
1 TSP Garlic Powder
1 TSP Dried Oregano
1 TSP Dried Thyme
1 TSP Granulated Onion
1 TSP Kosher Salt
1/4 TSP Cayenne


FOR THE SAUCE
1 TBL Unsalted Butter
1 TBL Extra Virgin Olive Oil
1 Medium Yellow Onion
1 TBL Minced Garlic
1 TSP Caraway Seeds
1/2 Cup Ketchup
1 Cup Beef Broth
2 Cups (1 pint) Guinness Extra Stout
3 TBL Balsamic Vinegar

Salt and Pepper to taste

Sesame Buns (personal choice, you choose whatever you want)

To make the rub: In a small bowl combine the rub ingredients. Press the rub into the brisket, cover/wrap and refrigerate 2-4 hours (the longer the better, in my opinion). Allow the brisket to stand at room temp for 30 minutes prior to grilling. Brush the brisket with olive oil and sear over DIRECT HIGH HEAT for about 6 minutes (3 on each side). Transfer to a braising pan (9x13 should work fine).

To make the sauce: In a medium saucepan over medium heat, melt the butter with olive oil. Add the onion, garlic and caraway seeds and cook for 5-6 minutes, stirring as needed. Add the ketchup, broth, whisk and bring to a simmer. Add the Guinness and balsamic vinegar. Return to a simmer, then pour the sauce over the brisket so it covers about 2/3 of the beef. Cover with foil and grill over indirect low heat ( e.g. smoke - 250-300ish degrees) for 3-4 hours, turning twice during grill time (technically this part could be done in the oven, but what fun would that be?). It should be fork tender when done.

I find that a good cold beverage of the stout persuasion matches the meat nicely, along with some spicy beans

Apple Crisp...It's apple season go out and get sum.

INGREDIENTS

* 4 apples - peeled, cored and sliced
* 1/2 cup brown sugar
* 1 cup all-purpose flour
* 3/4 cup white sugar
* 1 teaspoon ground cinnamon
* 1/4 teaspoon salt
* 1 egg, beaten
* 2 tablespoons butter, melted

DIRECTIONS

1. Preheat oven to 375 degrees F (190 degrees C).
2. In a 9 inch square baking pan, mix sliced apples with brown sugar. In a large bowl, mix together flour, white sugar, cinnamon and salt. In a small bowl, beat together egg and melted butter. Stir into flour mixture. Spread evenly over apples.
3. Bake in preheated oven for 30 to 40 minutes, or until topping is golden and crisp.


Make sure to eat with vanilla ice cream for best results.
