do you need a volume knob if you're wiring a guitar, or can you just solder the pickup wire to the jack and ground it.

You can, but it's kinda stupid. I like my guitar's volume for cleaning up the sound a bit by turning it down, it's a very useful tool.

I am not talking about while playing. If he has no volume control on the guitar then it is on at full volume so if he has the amp on and turned up, when you plug the chord into the guitar you are going to get all kinds of loud abrasive static and fuzz until its fully in.
But hey if fingernails on the blackboard turns your crank go nuts.....
