Two of the fastest AND accurate I have ever heard are John Petrucci of Dream Theater and Jeff Loomis(?) of Nevermore, those guys are insane.

hmm, my favorite shred solo at the moment is the GH3 version of Devil Went Down to Georgia, it's incredibly catchy.
But there's no sense crying over every mistake, you just keep on trying till you run out of cake.
