It's hard to find their stuf on the internet and even harder to find it in shops outside Australia, but you should check out Vanishing Point, they're an awesome melodic metal band.

Opeth is the obvious answer. Meshuggah, Dimmu Borgir, Strapping Young Lad, Wintersun, Pain of Salvation, Dream Theater, Symphony X...

I'm not sure if you'll like them, but Protest the Hero is really cool. I was sceptical at first, but they have turned out to be one of my favorite bands.
