whats the difference between a schecter c-1 blackjack and a schecter c-1 baritone? also why do so many emo/screamo/metalcore/any other newer genre like that play them?

Schecter makes some great guitars. I'm not really a metal kind of guy, but they feel and sound great. Beats the **** out of ANY les paul.

My guess is just that the Baritone is a much deeper, heavier sounding guitar.

If I remember correctly, the baritone has a longer scale neck, so the strings don't get too loose in dropped tunings. Probably has pickups made for the lower tones. I'd definitely try it out before you buy.
