What are some good metal bands that play great riffs and have great vocals, but kinda go easy on the screaming? So as an example, vocals sounding closer to Metallica than Meshuggah.

All Power Metal takes it easy on the vocals. Other bands like Nevermore also don't make use of screaming.

Definately NOT Trivium though.

The dude above me obviously has not heard The Crusade....the scream on Embers and Ascendancy but The Crusade is top-notch. Check out Megadeth too, it took awhile for Mustaine's voice to grow on me but they are really good. And I second Nevermore. That dude can sing really well.

Megadeth will be the closest to Metallica you'll probably find (but most people know this). Other bands that aren't like Metallica but still great metal bands with vocals that are understandable:
DragonForce, Astral Doors, Edguy, Helloween, Avantasia (though this technically isn't a band, it's actually a metal opera), etc. There's lots out there, just keep searching and you'll find stuff you like. also +1 to the Nevermore, great band. And stay away from Trivium, those 2 don't know what they are talking about.

Edit: Sorry to the one guy who corrected himself, I didn't realize he only suggested 1 song.

and yes "reign in blood" changed metal, and helped set the sound for the newer genre "death metal"

Pantera is a great band i used not listen to them besause i thought it was just screaming, but just listen to the song "walk". listen to the guitar work it has one of the best solos ive ever heard. that song got me into Pantera

Trivium is true metal now, after the crusade album (nice post-thrash sound)

A7X is metalcore, for the reason that they sometimes feature breakdowns, and use drop d or other drop tunings. (i,e, only downtuning the low e string)

Iced Earth is kind of like Iron Maiden but with a way more metal sound, Disturbed does really scream but the vocals get rough at times, Papa Roach but that not like ture metal, Shadows Fall's new album has some really good vocals on it! System of A Down does some easy vocals too.
