If you look at the "3-way mini-toggle (on/on/on)" at the bottom om the page...

Wouldn't it just be necesairy with a SPDT instead of a DPDT? Or am I missing something?

Yes, you're missing something. You don't understand how an on-on-on switch works.

In the MIDDLE position of the toggle the following internal contacts are made:

- the left pole is connected to the lower left throw.

- the right pole is connected to the upper right throw.

- the upper left throw and lower right throw, are not connected.
