Is there any benefit to putting these in as control pots instead of 250k or 500k pots? I'm going to be using 2 humbuckers, I just haven't decided what yet.

A 1 meg pot will offer more resistance between hot and ground at full resistance, thus, less treble will bleed to ground. You'll have a brighter sound.

Ya, I could see using 1 meg pots if you had a wood or pickups with really, really deep sound, but for your average guitar I would stick to 250k or 500k
