Currently, I use D'Addario Phosphor Bronze Medium acoustic strings. I was wondering what do most artists use? (light medium heavy, etc.)

Typically guys like Andy Mckee, Don Ross, and Antoine Dufour.

Also guys like Laurence Juber who do a lot of bending on an acoustic, which is hard.. would that be lighter gauge strings?

Light for bends and slides, but i prefer heavy for slap and tap style music.Get a set of both and see which you like better.

Don Ross....you're trying to play Don Ross? You're lying to me, I know it.

Well I started with Extra lights, moved to lights, now mediums.

I can play Laurence Juber's "White Pass Trail," and "Lunar Eclipse," but I am also working on a heavy tapping "Development" by Antoine Dufour. So I'll stick with the mediums since they are in between.
