If I buy a solid body guitar body that was made for a 5-Way switch, how hard would it be to cut into the wood and install a toggle switch instead?

if youre getting a strat it means a new scratchplate, but its pointless unless you're removing a pup>>>new scratchplate

Instead of the 5-way? Like a 3-way for just 2 pickups? You could use a tele switch for that. It fits the same as a strat switch.
