Is there a way that I can test the tubes I have in my amp to see how used they are/ how much life is left in them?

generally, you can test if it needs replacement yet, by tapping the tubes while its on with a pencil. tap it, and see if you get sound out of ur speaker. if u do, u should replace it soon.

I'm surprised I haven't changed them already.

I bought my jcm 900 used and the guy SAID that he changed em recently...

But the power tubes are Sovtek 5881's. I'm thinking EL34's for the ol' Marshall. Probably JJ.

Well, do you think they would be a good match in a jcm 900?
