I guess you could try Pachelbel's Canon. Though its more of a piece for the violin than guitar.

Anything achingly beautiful works. A transposition of the first prelude & fugue from Bach's Das Wohltemperierte Clavier, for example. Chopin nocturnes, too. For something more modern, there's the closer from Eluvium's An Accidental Memory In The Case Of Death, a modern minimalist piano album in the vein of Philip Glass' Solo Piano.
