I was installing a wiring harness in a Les Paul this weekend and found that one of the pots was possibly broken. The two parts had seperated so it was open. I pushed them back together, clamped down the metal tabs, and it fit fine. It feels sine now, but canpots be damaged simply by being opened?

Usually there won't be any damage, if you don't force anything.
And if nothing got inside to keep the wiper from touching the element.
I don't know exactly what you did, so I can't be sure you didn't cause any damage.
If you were careful, you're probably okay.
