Firstly, I'm really sorry for bringing up a Christmas song at this time of year. There must be other songs which use this technique, but I can't for the life of me think which ones...

Basically, what playing technique is used to get those very abrupt chords?

It's probably a very noobish question... but it's got to be asked.
