What kind of guitar do you want to build?
For warm tones, use mahogany or korina.
for midrangy tones, use alder, ash, or basswood.
for bright tones, use maple or other hard tonewoods.
For a Les Paul-like tone, use mahogany with a maple top.
For a strat or tele-like tone, use alder or ash.
superstrats use alder or basswood most of the time (an exception being the Ibanez S series).

You CAN play anything with anything....but some guitars sound right for some things, and not for others. Single coils sound retarded for metal, though those who are apeshit about harpsichord probably beg to differ.
