The Beatles' Let it Be is a nice sounding solo, and it's easy enough for a beginner. It's also conveniently in the key of C, the relative major of A minor.

The solo for Bad Company's "Rock Steady" would be a good one, it's somewhat long and not fast or anything, check it out.
