Instrumental like, ooh, Orion by Metallica, or like something Beethoven would compose? I can't really answer your question, but I dare say the genre of music you are playing would have an affect on labels who would sign your group.

Shred is largely instrumental is it not?

Apocalyptica are pretty successful on like 80-90% instrumental music.

I can't think of actual labels tho

There's definitely a market now for instrumental rock. Do Make Say Think, Explosions in the Sky, Godspeed You! Black Emperor, etc.

Well I don't know if there are labels specifically for instrumental bands...

Behold the Arctopus is an instrumental band, and they're with Metal Blade, which is a label that does a lot of metal bands. Apocalyptica has been with a few labels, I believe, and none of them are strictly instrumental. Um, Pelican is with Hydra Head, and again, they do a few bands, not strictly instrumental...

depends on style/genre of the instrumental,

You have classical instrumentals, and you have shred/metal instrumentals, you also have dance/techno instrumentals or post-rock etc.

Short answer, yes. But it isnt as popular as other forms IMO.
