I was wondering can a simple pickup change be done to a guitar to get the tone and sound you want, or is buying a guitar with the rights type of pickups the best thing to do?

Pickup changes are pretty simple, as long as you are going from passive to passive or active to active.
Generally changing power styles makes it a little more involved.

But honestly the amp makes up a bigger portion of your tone.

Yeah, spent some good money on new pickups for my strat and honestly I was a little disapointed. They're nice and everything but the stock pickups were just as good.
