when it says a 8-track recorder does that mean i can only have a 8 different guitar tracks??

Not at all. You can record 7 guitar tracks, mix them the way you like, and then bounce them all to the eighth track. Then you can record 6 more and bounce them to the seventh track, and so on...

Research bouncing, or ping-pong methods.

Well essentially, yes. It means you can only record 8 tracks of audio (any instrument, not just guitar). Buuuut, there is a way to bounce all of the tracks into one track once they're done, freeing up 7 more tracks to record onto.
